    This is an Asian inspired stew to serve over brown rice. The tofu is an excellent source of protein and a great addition to the Daniel Fast.

    1/2 cup 100% peanut butter
    2 cups vegetable broth
    2 tablespoons canola oil
    1 cup chopped onion
    3-4 cloves garlic, minced
    1 cup chopped green bell pepper
    1 cup chopped carrots
    2 pounds firm tofu, cut into 1 1/2-inch cubes
    2 tablespoons soy sauce
    1 teaspoon Five Spices
    1 cup diced tomatoes
    1/2 teaspoon ground ginger
    1 tablespoon lemon juice
    6-8 cups cooked brown rice
    WHISK together the peanut butter and vegetable broth in a medium bowl until well blended.
    SEASON the tofu with soy sauce and Five Spices. Heat the oil in a large stew pot over medium heat. Add the onion, garlic, bell pepper and carrots. Sauté until the onions are translucent.
    Add the tofu and continue to cook, stirring often, until browned on all sides.
    Add the peanut butter mixture, tomatoes with liquid, thyme and bay leaf. Stir well. Bring to a boil.
    Reduce heat to low and simmer, stirring occasionally for about 20 or until the vegetables are tender.
    SEASON to taste with salt and pepper. Serve hot over cooked rice.
    Yield: 6-8 Servings

    Garden Vegetable Soup
    This recipe calls for fresh vegetables, but substitute with frozen varieties if they are not available. By the way, tests show that frozen vegetables actually retain more of their vitamins and minerals because they are frozen so soon after harvesting.
    Ingredients:
    4 tablespoons olive oil
    2 cups chopped leeks, white part only (from approximately 3 medium leeks)
    2 tablespoons finely minced garlic Salt
    2 cups carrots, peeled and chopped into rounds (approximately 2 medium)
    2 cups peeled and diced potatoes
    2 cups fresh green beans, broken or cut into 3/4-inch pieces
    Preparation:

    cups peeled, seeded, and chopped tomatoes
    ears corn, kernels removed
    teaspoon freshly ground black pepper
    cup packed, chopped fresh parsley leaves
    teaspoons freshly squeezed lemon juice
    1. Heattheoliveoilinlarge,heavy-bottomedstockpotovermedium-lowheat.Oncehot, add the leeks, garlic, and a pinch of salt and sweat until they begin to soften, approximately 7 to 8 minutes.
    2. Add the carrots, potatoes, and green beans and continue to cook for 4 to 5 more minutes, stirring occasionally.
    3. Addthestock,increasetheheattohigh,andbringtoasimmer.
    4. Once simmering, add the tomatoes, corn kernels, and pepper. Reduce the heat to low, cover, and cook until the vegetables are fork tender, approximately 25 to 30 minutes.
    5. Remove from heat and add the parsley and lemon juice. Season, to taste, with kosher salt. Serve immediately.
    Yield: 6 servings

    Ingredients
    1 box 8 oz. whole wheat penne pasta, cooked per box instructions
    1/4 cup pasta water, reserved from cooking pasta
    1 package 12 oz. bag of Mann's Broccoli Wokley (in a microwave bag)
    4 whole sun-dried tomatoes in olive oil
    1 bunch flat leaf parsley
    4 tablespoons olive oil
    1 tablespoon chopped garlic, jar ok
    18 whole grape tomatoes, cut in half
    1/4 teaspoon red pepper flakes
    1 teaspoon salt
    1 teaspoon pepper
    1/4 cup pistachio nuts, crushed

    Instructions
    Using a fork, poke a hole in top of the Broccoli Wokley bag and place in the microwave for 4 min on high. Remove and open bag carefully and set aside. In the food processor, put 4 sun dried tomatoes, 1 Tbsp of olive oil (from sun dried tomato jar), flat leaf parsley and 4 Tbsp of reserved pasta water... .blend well for about 1 minute and set aside.

    In a large skillet, sauté olive oil and garlic for a minute, then add tomatoes for just 2 more minutes over medium heat. Add sun dried tomato mixture, cooked broccoli and cooked penne... .toss to blend. Heat for just a few min ..sprinkle pistachio nuts over the top and serve.

    The Mann's Broccoli Wokley can be found in the produce section by the salads. If you can't find Mann's broccoli, simply use any cooked broccoli of your choosing.

    Serves: 4.

    Cuban Style lentils

    You will need a bag of lentils. 16 Oz
    Ingredients Needed:

    Sea Salt
    Olive Oil
    One White Onion
    Green Pepper chopped
    Two heads of garlic chopped or pressed
    One chopped tomatoe
    Three leaved of shopped celery
    Two carrots chopped finely
    One brown potatoe (if you want it chunky)
    3 cups Vegetable broth (liquid or cube)
    1tsp. Oregano leaves
    1/2 tsp of cumin
    Two bay leaves

    Soak lentils overnight if possible.
    Saute in saucepan chopped onions, garlic, tomatoe, celery, green pepper, carrots in olive oil Add sea salt, cumin, and oregano.

    Combine all ingredients in large pot adding water as it evaporates.

    Optional: After fast you can add a 1/2 cup of white wine. "Goya Vino Seco"

    Bring to a boil in pot and cover until done.
    Lentils are done when soft.

    Serve with brown rice, a dash of olive oil and lemon juice. (Cuban Style)
